Ingredients
1 can of artichoke hearts, drained and chopped / mashed
1 cup seasoned bread crumbs
2 eggs
2 tbs olive oil
1/2 lemon, juiced
1/2 tsp garlic powder
Pinch of salt
1/2 cup Parmesan cheese
Instructions
Combine all ingredients except cheese. Mix well. Refrigerate for least 4 hours or freeze for 30 min
Form into bite sized balls. Roll in cheese.
Bake, uncovered, at 400°F about 15 minutes, or until light brown.
I made these EXACTly as per your recipe and found them to be extremely dry and flat tasting. Maybe next time I will use fresh minced garlic and will add some lemon zest. They also need something - like maybe a garlic aioli.
